Mashed Sweet Potatoes with Marshmallow Drizzle and Pecans. This is my little twist on a Sweet Potato Casserole Recipe. A simple and unbelievably delicious Thanksgiving side dish!
I decided to do a riff on mashed potatoes and gravy with the flavors of Sweet Potato Casserole. What do you get when you combine those two dishes? Mashed Sweet Potatoes with Marshmallow Gravy, of course!
Believe me, this Thanksgiving dish will be a hit. It tastes so good that I may have eaten half a batch by myself. Don’t judge until you taste for yourself! Switch out your usual Sweet Potato Casserole Recipe for this version.
I can’t wait for Thanksgiving. We do a small gathering at my house with lots of appetizers {my favorite} and all of the usual holiday dishes. But my absolute favorite part of the Thanksgiving meal is picking at the leftovers the next day. Turkey sandwich, lots of mayo, cranberry sauce and crisp lettuce . . . Oh Yeah! My mouth is watering just thinking about it. What is your favorite thing about the holiday feast?

- 6-7 Large Sweet Potatoes
- Olive Oil
- 1 Tb Butter
- Small Pinch of Salt
- 3/4 Cup Marshmallow Creme (Marshmallow Fluff)
- 2 Tb Heavy Cream
- Pecans (candied, roasted, or raw)
- Preheat oven to 375°
- Wash the sweet potatoes and pierce several times with a fork.
- Coat sweet potatoes with olive oil and wrap with tin foil.
- Bake for about 1 hour and 15 minutes or until a fork can be easily inserted into the sweet potatoes.
- Remove from oven, let cool.
- Peel off the skin and smoosh with a potato masher. (puree if you prefer smooth mashed sweet potatoes)
- Before serving, add the butter and salt then reheat on stove or in the microwave.
- To make the Marshmallow Drizzle -
- Microwave the marshmallow creme for 15 seconds.
- Stir in the heavy cream and microwave 15 more seconds.
- To serve -
- Top a serving of mashed sweet potatoes with the marshmallow drizzle and pecans. Optional: sprinkle with brown sugar.
- This recipe yields approximately 8 cups of mashed sweet potatoes.
